Durksen Farm Update – October 17, 2015 – Garden Harvest, New Venture

It has been a while since our last update and much has happened.  Our garden is now empty of all but a few squashes and carrots and the leaves on the trees are turning and falling with the inexorable marching of time to the winter.  We have lots of spaghetti squash and pumpkins available, as well as some onions.

Its been interesting times on our farm.  I recently started working with a very experienced and high quality butcher who is planning on retiring.    Our plan is to buy his business and set up shop as a butcher!  It is a great opportunity to learn from a master to make the highest quality products myself.  He is the one who has done most of the butchering and sausage making(except the farmer sausage) for our products.  Some products are running low already!  We will get more in soon, but if you want some now order soon to make sure we have some available!  See our Products page for info on pricing. We will provide updates on this venture as things unfold.  You will be able to buy our products at our retail store in Dugald, MB, only a few kilometers from the perimeter highway east of Winnipeg.  This will mean that we will also be changing our focus on the farm and moving away from the vegetables to concentrate on the meat products and eggs. This is a very exciting time for us, yet also very very busy and stressful which is why we will be moving to a monthly rather than weekly newsletter format as I have not had time recently to devote to this.  As many of you know, we are also expecting our second child in the new year, which will make for a very interesting time in the Durksen household!

Durksen Farm Update – August 29, 2015 – Farmer Sausage Arrives!

Finally we received our farmer sausage!  Just arrived out of the smokehouse at Unger Meats.  We are also seeing some brisk sales on many of our other pork products, especially bacon, breakfast sausages and other things.  Order soon to make sure we have some available!  See our Products page for info on pricing.

Free Range Egg fact –  When you buy eggs in the store, they are often labeled as Free Run and sometimes as Free Range.  People often wonder what is the difference.  Free Run eggs are chickens which are not kept in a small cage, but are nevertheless kept indoors in a barn.  They get excercise, but the quality of the egg may not be much different than conventional eggs.  Free Range, on the other hand, are layed by hens which are given access to the outdoors and allowed to eat grasses and other greens and scratch for worms and bugs.  These eggs generally have a much deeper yellow yolk and are more flavourful and healthier, and the chickens are much happier as well! :)  Our laying hens have daily access to the entire farm and range around for anything they want.   Keep and eye on our Tips and Recipes page.

Durksen Farm Update – August 15, 2015 – Hand Pollinating Squashes, New Pork Products

Today we received more of our pork products: bacon, ham, back bacon, smokies, chorizos, butt steaks and roasts and some salami.   See our Products page for info on pricing.  Please note that some prices will be changing as we work out the true cost of the products.
Gardening Tip – Pollinating Squashes by hand –  Sometimes I find that our zucchinis, squashes and cucumbers start developing fruit but quickly rot off because they are not pollinated properly.  It can happen if there are not very many bees in the area to pollinate.  Its very easy to ensure good pollination by hand.  The male flowers are the ones which are located on the end of a stem, and the females are attached to the undeveloped fruit.  Simply break off a male flower and open it up.  Either rub the staman(pollen bearing structure) into a female flower, or use a small paintbrush to transfer the pollen.  This will ensure proper pollination and a larger harvest.  Keep and eye on our Tips and Recipes page for more tips and recipes.

Durksen Farm Update – August 8, 2015 – Chickens and Pork Ready, Brinning Chicken

Our freezers are overflowing with chickens and pork!  The bacon, ham, smokies and butt steaks will be another week or so, and the farmer sausage will still be a couple of weeks.  We do have some superb breakfast sausages, chops, roasts as well as our free range chickens just processed this past weekend.   See our Products page for info on pricing.
Our garden is continuing to produce and we got our first tomato this last week. It will be a bit before most of them are ripe, but we are starting to also get cucumbers, peas, beans and onions along with the kale, lettuce and chard that we have had for a while now.
Brining Chicken: – One trick for making very tender and moist roast chicken is to brine it.  To make the brine add 1/8 cup table salt(or 1/4 cup course sea salt) and 1/8 cup sugar per liter of cold water. Place the whole submerged in the brine for a few hours to overnight.  Some people also add herbs or spices to the brine.  However, the brine then needs to be boiled to steep the flavour of the herbs into it.  Then place in a roaster and cook at 350F for 20 minutes per pound and allow a little extra.  Over 6 lbs cook for 15 minutes per pound plus a little extra.  Cook to an internal temperature of 190 degrees Fahrenheit.  Keep and eye on our Tips and Recipes page for it and more recipes.

Farm Update July 31, 2015 – New chicks and pigs, Weekly Harvest

For those interested in what we are doing, we have started a newsletter which you can sign up for at www.durksenfarm.com.  It contains much of the info we have here plus some pictures and more.

This Saturday is our first chicken processing day for this year. They look very happy and healthy and should be just in the weight range we like. We still have a few frozen ones from fall on clearance, but will have a freezer full of fresh ones this weekend! The other big event this week is we will be sending out 4 pigs for processing next Tuesday. We will finally be able to fill our freezers with wonderful farmer sausage, bacon, and other pork products! See our Products page for info on pricing. This week we have finally started to get some harvest from other plants like peas, beans and herbs. Unfortunately, some of our lettuce was decimated by deer.

Kale Tips(Continued): – Last week I gave a recipe supposedly for kale chips, but ended up being a great recipe for burnt kale! It was truly terrible. I will post a new recipe for some “Sour Cream and Onion” kale chips soon, I had some at a family gathering recently and they were fantastic! Farm Update – July 24, 2015 Weekly harvest, Kale Tips

This summer has been almost ideal for our garden as we have had regular rains with sunny periods in between.  Already most of the plants are larger than they were in fall last year!  Its wonderful to see.

Kale Tips: – Kale is a highly nutritious green that has many uses.  We often cut it into strips and add it to soups.  We have added a wonderful kale, chickpea and sausage soup recipe to our website. Another idea is to shake kale leaves in a bag with olive oil and spread them out on a baking sheet at 350F for 10-15 minutes until edges are brown but not burnt.  We try to pick out kale young and tender so it is very good in salads, omelets or scrambled eggs.  We have two types of kale available: the traditional curly kale that you see in the grocery store, and Premier kale, pictured here, which has a more mellow, cabbage-like flavour.

Farm Update July 17, 2015 – Current Veggies, Tip for Boiling Eggs

Not an whole lot has changed in our farm since last week.  Our produce choices are a bit limited at the moment, but in the next two to three weeks there will be many more products being added to the list of available vegetables.  We are continuing to work on our website and I will be working on the format of the newsletter emails.  As always, if you are interested in any of our products please feel free to call(204-866-4408) or email(tim_durksen@hotmail.com).

We are in the process of getting ready to put in the biggest pork order that we have yet completed. So far we have only processed one pig at a time, but now we are doing four. We recently ran low on most of our pork products so this will insure that we have plenty for the next few months.

Egg Tip – Boiling Farm Fresh Eggs

An interesting fact about eggs: fresh eggs(which have been collected within the last 14 days) will not peel as easily when boiled. If you want to boil fresh eggs its easiest to leave it in the fridge for 3-4 weeks and then boil them. They then peel more easily and the white does not stick to the shell as much as the fresh eggs. This is not usually a problem with eggs from the store because the eggs in the store are generally 3 weeks to 3 months old when they are on the shelves.

For Trinity folks, this week’s vegetable(and anyone interested in vegetables) harvest will be:

Kale – $2.25/bag

Lettuce – $2.50/bag

Swiss Chard – $2.25/bag

Zucchini – $1 each for bigger ones and $2.50/lb for baby Zucchini

If anyone would like green onions we can bring some in for you at $1.50/bunch, but we will let them grow if not.

Farm Update July 7

We are well into the summer now and our garden, chickens and pigs are doing quite well.  I have not been very regular with updates to our farm and I would like to start posting weekly updates describing the produce and meats which we have available that week.  Our garden has been doing quite well this year, and we finally have enough time to keep up with the weeds better than last year.  For those who are at Trinity Baptist, we will be bringing in some Kale and lettuce as well as the eggs we regularly bring if anyone is interested in them.  For anyone who may not know we usually set up in the kitchen where you are welcome to come and buy anything we have available.  We still have some pork ribs left and will be getting more of all our other pork products in a few weeks.  If anyone would like ribs or free range chickens let us know and we will bring it in for you.  We are also looking for someone who would be interested in half a hog at $3.50/lb.  Our hogs are pasture raised Berkshire pigs renowned for their flavour and marbling.  Please let us know if you are interested.  God bless!

Spring is finally here!

Finally the grass is all out from its snowy blanket and the birds are coming around in greater numbers.  Our trees are already beginning to bud and the maple sap is flowing for our syrup making!  We may even be able to plant our garden a couple of weeks earlier than usual. Our pigs are growing more quickly and the chickens are venturing out into the world again.  And to top it all off we are having a sale!  Our chickens are now only $3.00/lb and the turkeys only $2.75(while supplies last).  We also have a new pork product: farmer sausage @ $8.00/pkg.  This is a really great sausage.  I have updated the products page on our site, so feel free to check it out and we will have 2 or 3 pigs available for whole or half hog orders in 2-3 months.

So our sow, Olga, finally had her little ones: eight new pigs!  Mom and pigs appear healthy.  These little ones should be ready for next spring and summer.2014-10-20 22.26.59
