Kale and Chickpea Soup – Here is a wonderful kale soup recipe that our family loves. The recipe calls for Chorizo sausage, but we have usually used farmer sausage.

Brining Chicken: – One trick for making very tender and moist roast chicken is to brine it. To make the brine add 1/8 cup table salt(or 1/4 cup course sea salt) and 1/8 cup sugar per liter of cold water. Place the whole submerged in the brine for a few hours to overnight. Some people also add herbs or spices to the brine. However, the brine then needs to be boiled to steep the flavour of the herbs into it. Then place in a roaster and cook at 350F for 20 minutes per pound and allow a little extra. Over 6 lbs cook for 15 minutes per pound plus a little extra. Cook to an internal temperature of 190 degrees Fahrenheit.
